Goji and Maqui Berry Cream Tarts

Goji Berry Tart

That’s right! Goji Berry and Maqui Berry Cream Tarts, yum!  I felt like playing with colors and my superfood powder so I came up with these raw, vegan and gluten-free cream tarts.  To get the beautiful pink color I used goji berry powder and a bit of beet powder. To get the vibrant purple color I used Maqui Berry Powder, both mixed with coconut whipped cream.

To make the crust, blend all ingredients in a food processor and press into mini tart tins.  Set the pie crust in the freezer while making the cream filling.  To make it easier, I always make the crust the day before and set them in the freezer overnight.  For this recipe I used 4 inch tart pans and 2 1/2 inch tart tins to mix it up.  You could also double the recipe and make a pie.

I could eat coconut cream every day all day!  I have to contain myself though because everything in moderation right?  I have to say, these turned out amazing!  These tarts are not too sweet and surprisingly very light, also very nutritious.

Goji berries are the most nutritionally dense fruit on earth and Maqui Berries have been called one of the most powerful superfoods.

Health Benefits of Goji Berries:

  • Contain all essential amino acids and have the highest concentration of protein of any fruit
  • Loaded with vitamin C, contain more carotenoids than any other food, have twenty-one trace minerals, and are high in fiber
  • Boasting 15 times the amount of iron found in spinach, as well as calcium, zinc, selenium and many other important trace minerals, there is no doubt that the humble goji berry is a nutritional powerhouse
  • This amazing little superfruit also contains natural anti-inflammatory, anti-bacterial and anti-fungal compounds

Health Benefits of Maqui Berries:

  • In South American traditional medicine, maqui has been used to address symptoms of diarrhea and fever
  • Indigenous communities in Chile have used the leaves of the plant to dress wounds. Why? Long used as an astringent, research has confirmed the plant has cleansing properties
