Cucumber Dill Veggie Wraps wrapped in Coconut Wrappers
Veggie wraps with a yummy dill mayo wrapped in coconut wrappers.

Ingredients
Dill Mayo

macadamia nuts
soaked
1/3

fresh dill

lemon juice

coconut aminos

tablespoon
agave
1
teaspoon
whole caraway seed
dash of salt
water as needed
Veggies
1
red bell pepper
julienne
2
large carrots
julienne
1/2
cucumber
julienne

cup
pea shoots
1
cup
alfalfa sprouts

Instructions
Dill Mayo
Soak macadamia nuts for 30 minutes, rinse and drain.
Chop dill.
Place all ingredients except dill in a high-speed blender and blend until smooth.
Transfer to a bowl, add dill and mix gently.
Wrap
Spread dill mayo on wrap evenly leaving about 1 cm of space around the edges. (I like to use a lot)
Layer veggies to your liking towards one end of the wrap, fold side edges and roll wrap. Cut in half and enjoy!
Notes
Make the dill mayo the day before use; the flavor will be that much better!
